Linguine with Marinara Sauce

Ingredients
This tasty classic is a great source of vitamin C and potassium.

  • Olive oil-flavored vegetable cooking spray
  • 1 C chopped onion
  • 1/2 C chopped green pepper
  • 1/2 C shredded carrot
  • 1/2 C sliced celery
  • 2 cloves garlic, minced
  • 3 C peeled, chopped tomato
  • 1 (6-ounce) can tomato paste
  • 1 1/2 t dried basil
  • 1/2 t dried oregano
  • 1/2 t salt
  • 1/2 t sugar
  • 8 ounces linguine, uncooked

Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and next 4 ingredients; sauté 5 minutes or until tender. (Add water, 1 tablespoon at a time, if needed, to tenderize vegetables.)

Add tomato and next 5 ingredients; bring to a boil. Cover, reduce heat, and simmer 45 minutes.

Cook pasta according to package directions, omitting salt and fat. Drain. To serve, spoon sauce over pasta.
